What is sous vide?

Before we dive further into how to use up Slow & Low sous vide chicken in your meals, let’s address the chick in the room. What does “sous vide” mean, you ask? Well, it’s a French term which translates to “under vacuum”. Ah, oui oui! Such method of cooking necessitates food to be precision-cooked in a vacuum sealed pouch and submerged in a regulated heated water bath. This ensures the food to be cooked evenly at a consistent temperature, without any chance of overcooking the edges. Sounds pretty juicy, doesn’t it?
